My boyfriend and I recently went to Hawaii for vacation, and we had a great time. I took the above picture at sunset one day when we drove to the last beach at the end of the road going past Hanalei. The picture above that was the view from our room. It was amazing! I was really worried about being able to eat gluten free there, but Kauai was BY FAR the easiest place I have ever been to eat gluten free. It is much easier than Chicago. We stayed at the St. Regis in Princeville, and I knew it was going to be fancy, but they were much more than accommodating. They anticipated what I might want based upon what I ordered and started to bring in more gluten free foods than they already had. I can definitively say this was the most gluten-free -accommodating hotel I have ever been to in my life. Every morning, I would tell them I was coming to breakfast and they would make fresh gluten free Pineapple-Coconut, Macadamia Nut, and Blueberry GF muffins. They also had GF granola, GF pancakes, GF waffles, and anything else my heart could possibly desire. I have not had this much access to “bad for you” food in so long that I went a little overboard, but it was totally worth it. I would like to thank the St. Regis in Princeville and Sweet Marie’s Bakery in Kauai (she supplied them with a lot of their GF items) for making my vacation the best I could ever imagine. The way to my heart literally is through my stomach, and, being a celiac, it’s very difficult for more restaurants/hotels to get there. Haha! But this was the best GF traveling experience I’ve ever had.
This is what a daily breakfast looked like. Pancakes, Omelettes, Muffins, Gluten Free Toast!! I wish I could go back so badly!!

They also had this delicious gluten free granola with yogurt and fruit as a gluten free option. I could not have been happier.
On a side note, I didn’t get a picture of it, but at the pool restaurant, they had a delicious gluten free barbecue pizza. I would highly recommend it.
