Paleo Chocolate Raspberry Mini Muffins






So I got this Paleo cookbook entitled “Make It Paleo” by Bill Staley and Haykey Mason and finally decided to try to make something in it(first made this in August, but forgot to take pics).  Of course, I went for sweets first.  Overall, I really like these muffins.  I’m not sure if it’s that my coconut flour was old or if it’s just these muffins, but I much prefer the taste of the muffins while actually eating them than the aftertaste.  I would give these an A when they’re fresh out of the oven and an A-/B+ at all other times :)

Here is the recipe from “Make it Paleo”:
Chocolate Rasberry Mini Muffins

1/2 C Coconut Flour
6 Eggs
1/2 C Palm Shortening (I used Vegetable Shortening)
1/2 C Pure Maple Syrup
1/2 TBSP Vanilla Extract
1/2 Tsp Salt
1/4 Tsp Baking Soda
1 C Frozen Raspberries
1/2 C Mini Semisweet Chocolate Chips


  • Preheat oven to bake at 350
  • In a large mixing bowl, blend coconut flour, eggs, palm shortening, maple syrup, vanilla, salt, and baking soda with a hand mixer
  • 4. Place muffin paper into the muffin tray (I just lined them with coconut oil and it worked out fine)
  • 5. Fill each cup 3/4 full with batter
  • 6. Bake at 350 for 30-35 minutes (I did 32 minutes)

Chocolate Bacon Cookies (Paleo, Gluten Free)

Paleo Chocolate Bacon Cookies

This recipe is from the same cookbook that the Chocolate Raspberry Muffins are from.  It’s called Make it Paleo by Bill Staley and Hayley Mason(Go buy it.  It's such a great cookbook!) You can find out more about them here.  These are AMAZING! The best Paleo and gluten free cookie I’ve ever made.  A+ for sure! Make them ASAP!! (I would recommend cooking them at like 360 instead of 375. I burned my first batch)

“Infamous” Bacon Cookies
(from Make it Paleo)

5 slices nitrate-free bacon
1/4 C pure maple syrup
3 C blanched almond flour
1 tsp baking soda
1 tsp salt
2 eggs
1/2 C pure maple syrup
1 tsp vanilla exract
1/2 C coconut oil, unrefined
1.5 C 72% dark chocolate chips

1) Preheat oven to 350
2) In a medium size mixing bowl, toss bacon in 1/4 C maple syrup
3) Lay bacon on parchment-lined baking sheet
4) Bake for 20 min or until crispy
5) Remove bacon from oven and allow to cool
6) Crumble candied bacon for cookie batter
7) Heat oven to 375
8) In a medium-sized mixing bowl combine dry ingredients
9) In a small mixing bowl beat eggs, 1/2 C maple syrup, and vanilla extract with a hand mixer
10) Pour wet ingredients into dry and beat with hand mixer until combined
11) Add melted coconut oil into batter, and continue to blend until combined
12) Stir in chocolate chips and candied bacon
13) Drop balls of dough on parchment-lined baking sheet, about a Tbsp in size
14) Bake cookies for 15 min at 375
15) Let cool and serve :)
