Normally, if I'm going to make pancakes, I prefer to make "healthier" versions with coconut flour, almond flour, or just bananas and eggs. The nutrition profile of these isn't great, but they tasted great and it was a special occasion because my sister was visiting, so it didn't bother me that these weren't the "healthiest" pancakes I've ever had. I'm sure IHOP and anywhere you could go commercially would be much worse, and at least, making them at home, I can use Vital Farms eggs.
These pancakes were incredibly easy to make. You just add water, eggs, and butter (I used a mix of coconut oil and Kerrygold butter).
I added some Siggi's Pumpkin Spice Yogurt on top to make it extra delicious! :)
