LLBalanced Jumbo Morning Glory Muffins

I love trying Laura Lee's recipes, and I even ordered a Jumbo Muffin pan just to make these.  Here's the recipe if you want to give them a try. They're really good, but I think I was just slightly underwhelmed with the flavor of these. I don't really even know why. I think maybe if I made them again, I would add something else. Maybe coconut extract? They're really moist and tasty though. And relatively healthy. I made mine with almond flour instead of rye flour (celiac disease...duh), added coconut and semi-dried apricots, and they turned out great.  I think I'm just more of a chocolate girl. Haha!

These are delicious! I mentioned them in the Pumpkin Spice post, so I decided I had to post about these as well. Do yourself a favor and try her recipe. I seriously can't get enough of them. Both types are amazing, and, between the two, my preference honestly depends on my mood. The paleo version is softer and gooier. The gluten free oat version is more dense and a little dryer, but in a good way. It's so hard to choose, but I am seriously so impressed by this recipe, and I was pretty impressed with my drizzling skills on this one. :)


This is the paleo version. The darker ones are the "regular" gluten free version with oats.
