We went apple picking the other day, so I've been trying to decide what to do with all of the apples since we got home. :)
I'm trying to be healthy right now because I just did an elimination diet and really liked how I felt on it, but I don't want to be crazy strict and not enjoy life, so this I ended up with this "healthy" apple crisp as my plan. I was really impressed with how easy the recipe was, and it really didn't take that long.
With that said, it's definitely a food that I have a hard time stopping eating, so maybe I won't make it again. It tastes great and is really easy though. The only thing I screwed up was the caramel. I didn't read ahead enough to realize that you have you add the coconut oil and vanilla after it has already sort of created a sticky goo. I put it all in there in the beginning, and it never really got hard, but I still put some on the crisp, and I thought it tasted good, although I wish I wouldn't have messed it up so that I could have gotten the full effect.
All you do is mix the apples with arrowroot. Then mix the topping ingredients. Then bake. While you're baking you make the caramel. SUPER easy! I would definitely give this recipe an A+
