I bought these mixes a while ago. I realized they expired this month, so I had to make them both at once. I did the exact same prep with both, but for some reason, the chocolate was great and the vanilla turned out awful. I'm not sure if it had to do with being so close to the expiration date, but I definitely preferred the Chocolate to the Vanilla. I also kind of created my own "frosting" using gluten free nutella, coconut oil, and Nutso crunchy nutbutter. I LOVED it.

I really loved these cupcakes. They would obviously be great as a cake too. They were incredibly moist (I hate the word too, but it's accurate) and flavorful, and I used coconut oil for the "oil" in them. They turned out great.
