Failed Easter Cake

I saw this beautiful picture of a coconut Easter Cake in Living Without Magazine. I was really excited to try to make it. I literally did everything it said, and I still can’t figure out what went wrong. To me it looked like it would taste great, but it just kind of tasted like stale, weird cornbread. I used part Pamela’s Gluten Free all-purpose flour and part King Arthur, and I normally LOVE both of these flours. I’ve been thinking maybe one of them was too old or maybe it was bad to combine them or maybe it was just a bad recipe. I’m not sure, but I thought it was pretty, so I wanted to post it here. I was pretty impressed with my pipetting skills out of a ziplock bag. Haha! So if you see this recipe, be’s apparently only for experts. :)
