Laura Lee Balanced (LLBalanced) "Healthy Turkeyburger Helper"

I've been wanted to make this for a while, and I finally bit the bullet. There was grassfed ground beef on sale, so I decided to just make it with that, making it more of a "hamburger helper" situation. The pictures aren't pretty, but I have to say it was pretty easy, and I really like the flavor. I used Banza chickpea pasta, and I added a tiny bit a goat cheese and spinach. I also used yellow bell peppers instead of green. It turned out great, even though it looks like...well, it doesn't look appealing. I'll just leave it at that. :)


LLBalanced Jumbo Morning Glory Muffins

I love trying Laura Lee's recipes, and I even ordered a Jumbo Muffin pan just to make these.  Here's the recipe if you want to give them a try. They're really good, but I think I was just slightly underwhelmed with the flavor of these. I don't really even know why. I think maybe if I made them again, I would add something else. Maybe coconut extract? They're really moist and tasty though. And relatively healthy. I made mine with almond flour instead of rye flour (celiac disease...duh), added coconut and semi-dried apricots, and they turned out great.  I think I'm just more of a chocolate girl. Haha!
